Chef at Casa Solla* (Poio, Pontevedra)

For almost 20 years Pepe Solla has been running the kitchens at the restaurant his parents opened almost 60 years ago. One of the mainstays of Galician cuisine.

Pepe Solla (Poio, Pontevedra, 1966) began his career in catering in 1991 at Casa Solla, the restaurant opened in 1961 by his father, José González Solla, who died in January 2020. Initially he combined his work as sommelier with a Business Studies course. His interest in the world of wine and studies on monographic courses with the Spanish wine-tasting organisation Unión Española de Catadores made him a founder member of the Galician Sommeliers’ Association in 1994. 

In 1995 he began to learn to cook, and at first he combined this with his work on the floor of the restaurant. After a number of courses and placements – at elBulli, for example – in 1999 he took over the kitchen at Casa Solla, and undertook full management in 2003. Since then Pepe Solla has managed to maintain the status and respect of one of the temples of Galician cuisine, one of the first restaurants in the Community to be awarded a Michelin star (1980); the restaurant that has held it for longest.
