José Pérez

Pérez has been a professional anemone gatherer since 2003, when Andalusia's regional government tendered licences for the fishing and sale of sea anemones. He began with two provincial licences to work in Cádiz and Granada.

During all these years, after much hard work, he has succeeded in introducing his produce in haute cuisine, and making it an essential component of the menu in the country's leading restaurants.
