His cuisine is strictly market-based, often with harmoniously intertwined Colombian influences.
Pedro is Colombian and continues to visit the country to cook with friends, despite having lived in Tenerife for over 25 years. He came to Tenerife to pick tomatoes, but went on to become one of the first sommeliers to graduate from the island's Chamber of Commerce. He won the award for the Best Wine List in the Canary Islands at his first restaurant, El Covacho, and completed his training at Ferran Adrià's Chocovic courses.
He then studied cooking in Colombia and, upon returning to Tenerife, opened Etéreo, a restaurant that has earned him a Michelin recommendation and a Sol Repsol award.
