Chef at Shibui (Santa Cruz de Tenerife, Tenerife, Spain)

Born in Madrid, he has always been fascinated by Japanese cuisine. He specialised in the best restaurants of the time, such as Suntory and Yashima.  

His career has left a trail of stars in different restaurants, and he currently runs his own restaurant, Zuara Sushi, where he works in the omakase style, which he pioneered in Spain. 

In the kitchen of his restaurant, Shibui, in Santa Cruz de Tenerife, two cultures, Western and Japanese, merge.
