Sergio Ortiz de Zarate
Chef at Zarate* (Bilbao, Basque Country, Spain)

He trained at the Leioa School of Hospitality and worked in several restaurants before beginning his business career at Mesón Arropain in Lekeitio in 2003. It was there that he received his first recognition, winning the ‘Best Cod Dish’ award.
In 2011, he relocated his restaurant, Zarate, to the heart of Bilbao on the legendary Calle de Pozas. In 2015, he was awarded a Michelin star for the restaurant, an accolade he has held uninterrupted to this day. Since 2016, he has also been recognised with two Repsol suns.
In 2019, he opened the renowned Taberna de Zarate in the Indautxu district, famous for its tortillas and traditional Navarran cuisine.
In 2020, he received the Euskadi Gastronomy Award for Best Restaurateur.
He founded Bisubi Fundazioa and the Gastroutopia restaurant with other chefs.
