The risk of ciguatera in the Canary Islands

Ciguatera poisoning, an emerging threat linked to the consumption of fish contaminated with marine toxins, explaining its causes, health effects, and the importance of understanding this risk in the context of environmental change.
A deep insight into one of the most common foodborne illnesses originating from the sea: ciguatera. This condition occurs after consuming fish that have accumulated ciguatoxins, natural compounds produced by microalgae that concentrate throughout the marine food chain.
The presentation examines not only the mechanisms by which these toxins enter the food supply but also their potential effects on human health, ranging from gastrointestinal issues to neurological and cardiovascular disturbances. It also frames this phenomenon as an emerging food safety risk, particularly in the context of climate change and the globalization of seafood products, which may facilitate the spread of these microorganisms.
