Living without refrigeration, immediacy in fish consumption: kinilaws

We will talk about kinilaw as a representative and ancestral dish of the Philippines and we will make different techniques and versions.

The presentation will teach and explain that the Philippines is an archipelago surrounded by seas with some of the greatest marine biodiversity in the world. An encounter with a community of fishermen who live in isolation and whose way of life is to collect, fish and consume directly as they have no refrigeration system.

This is the origin of kinilaw or Filipino ceviche and the use of tabon tabon. A fruit that has the peculiarity of killing bacteria and allowing the fish to be eaten raw.
